Pan-Broiling & Roasting Steaks/Pork Chops/Veal/Ham/Lamb
This is a guideline to cooking Steaks/Pork Chops/Veal/Ham/Lamb. Please feel free to use your favorite seasoning or recipe.
1. Season your steak as you normally would.
2. Heat the skillet over medium heat until a small drop of water “dances” in the pan. Place steak into the pan. Just like when grilling steak will stick to pan. Do not try to move or turn the steak.
3. Allow the steak to begin cooking until you see the juices start to escape. Turn the steak and do the same for the other side. At this point you can add vegetables of your choice if desired such as onions, mushrooms or green peppers.
4. Once both sides have seared you can turn the burner to low and continue cooking, depending on the temperature you like your steak. Estimated times are 2-3 minutes for rare, 3-4 minutes for medium, and 4 or more minutes for well. Please note time varies due do size and thickness of the steak.
You can use this same method of cooking for pork chops, veal, ham and lamb.
