Vacations are over, summer homes closed, and school is back in full swing. There’s plenty of everything - except TIME. Save yourself some time by converting your favorite recipes to the Lustre Craft waterless, greaseless way of cooking by following the following basic instructions. Here is a quick review of the features and cooking techniques that will enable you to prepare quick wholesome meals.
1. For most cooking, follow this basic rule: begin on medium heat, cover with the Vapor Valve® open. When vapor escapes, reduce the heat to low and close the valve. Cook until your desired degree of tenderness or doneness is obtained.
2. When browning meats and poultry, preheat your pan on medium until water “dances” when dropped on the hot surface. No need to flour the meat or use oil to brown it unless you choose to do so. Place your meat in the pre-heated pan and allow it to cook until it can be easily lifted from the pan. It will stick at first but will release when nicely browned. After browning, add other ingredients and seasoning, cover and reduce heat to low. Cook on low until degree of tenderness or doneness is obtained. Expect this to be about 1/3 less cooking time than usual.
3. Casseroles can be cooked on your range top rather than in the oven by starting with the pan covered on medium; when vapor escapes, close the valve and reduce the heat to low.
Simple, basically-prepared vegetables, grains, meat and fruit will provide solid nutrition but let’s face it - that can become dull. Recipes will take you from dull to terrific, adding spice and variety to your meal!
Our Featured Recipe is a Pork Roast Dinner. A commercial barbecue sauce is used but a healthier, homemade version can easily be made giving you control of how much sugar is used and the tanginess of the sauce. Vegetables are cooked along side the roast in the Gourmet Cooker. They can be changed, increased or decreased according to what you have on hand. The Gourmet Cooker allows you to slow-cook your dinner, for about 8 hours. Or you can cook the dinner on the range top in about 2 - 2½ hours depending on the size of the roast.
