Ingredients
Serve as a side dish or under a curried stew

1 cup Rice, long grain uncooked
½ cup Lentils
2¾ cups Chicken Stock, chicken broth, water or combination of stock & water
1 medium Onion, chopped (#2 cone)
½ cup Dates, chopped
¼ cup Dried Apricots, chopped
¼ cup Raisins
¼ cup Almonds, slivered

 

Directions
1) In a 2 qt or 3qt, combine rice, lentils and broth. Cover with valve open. Cook on medium heat until vapor escapes from valve.

2) Add the onions, dates, apricots, raisins. Cover and bring back to the vapor point.

3) Close valve and turn to low. Cook for 8 minutes. Turn off heat and allow to sit covered for 25 minutes.

4) Stir with fork. Serve with slivered almonds on top.

Cooking Tips:
* All ingredients can be added at the start of the cooking time for an easy one-step process. Do not lift lid while it sits off-heat.
* If brown or wild rice is used, increase the cooking time on low heat to about 20 minutes.
* For a vegetarian choice, use vegetable soup base in place of chicken broth.
