1 whole Chicken, cut into 8 pieces
1¼ tsp Sweet Paprika
½ tsp Cumin, ground
¼ tsp Cayenne or red pepper
¼ tsp Ginger, ground
¼ tsp Coriander, ground
¼ tsp Cinnamon
3 strips Lemon zest
3 Tbs Lemon juice
3-5 medium Garlic cloves, minced
1 large Onion, cut into ½ inch slices (about 3 cups)
1 can Chicken broth, low sodium
1 Tbs Honey
1 Medium Carrot, cut into thick slices
1 can Chickpeas, rinse and drain
1 cup Dried Apricots, cut in half
2 Tbs Cilantro leaves, fresh chopped

1. Remove as much skin as possible from the chicken and cut into eights. Preheat the 4 quart utensil of the Gourmet SloCooker on the stove top. Heat on medium heat until water dances when dropped in the hot pan. Place chicken meaty side down and brown. Turn and brown the other side. This may need to be done in two batches.
2. While the chicken is browning, combine first 6 spices. Mix and set aside.. Mince 1 clove of garlic and one of the lemon zests. Combine them and set them aside.
3. After the chicken has browned, remove it from the pan. Add the sliced onion and remaining two lemon zests. Add ¼ cup of water. Stir and toss onions with the liquid. Scrape the dark brown bit from browning the chicken into the water and onions. Cover and reduce heat to medium low. Cook for 5 minutes.
4. Stir onions and add remaining minced garlic. Stir to blend and cook about 30 seconds. Add about half of the mixed spices. Stir in the honey. Return the chicken to the pan, placing the breast on the top. Add the slice carrots and apricots. Cover and place on the SloCooker Base on setting #4. Cook about 2 hours or until chicken registers 165 degrees and completely tender and cooked..
5 to 15 minutes before serving, add the remaining spices, stirring in gently; add the drained chickpeas, cilantro and lemon juice. If the chicken is done, turn to #1 to heat the chickpeas and hold the chicken at serving temperature. Season lightly with salt and pepper to taste.

Diabetic Exchange:
*Cook on the stove top for a shorter cooking time. In place of moving to the SloCooker Base, cover and turn to low. Cook about 20-minute. Add the additional ingredients and proceed as outlined above.
